The Garden Lasagna w/Eggplant Noodles is in the oven! I’ve made this up many times, but, excited to try yours! Took a couple detours…no tofu, but used a marinated goat cheese & used your other ingredients. We are GF and really trying to go vegan…not there yet. I am Celiac and do struggle with getting enough protein and don’t do soy.

If I wanted to cook your slow cooker jackfruit Turkey and gravy on low, how long would you recommend? Trying to plan my Thanksgiving meal so doing a trial run. Thank you!

It should take about seven to eight hours on low, however, this will depend on your slow cooker. I’ve discovered they vary depending on the brand and/or model. If you’re able, you may want to check after six hours. Please let me know how it comes out!
