¡Feliz Cinco de Mayo! In honor of today’s holiday, I present you with my newest version of one of my favorite Mexican dishes. Chile Relleno Squares, kind of a cross between a chili relleno, and a… well… I’m not exactly sure, but they are very yummy, vegan, and gluten/grain free.
